I know these are crazy rare, VW only made a handful and a couple aftermarket companies made a small number of them by dying stock ones black. Anyone know of how they took grey/beige ones and made black ones?

No, I made one.

Here's a pic of it before I finished the rest of the head liner

And here's everything else black. Thought I had a pic of it all installed but can't find it at the moment

Nope, they're all grey or tan if it had tan interior.

First off, respect for your handy work, that looks absolutely amazing. Ever since I saw one of the black lights I have thought about making one but figured I would never be able to get all the little lines correct.

I would assume you painted/dipped all the plastic parts; did you die or recloth the headliner and pillars?

It's all done with Duplicolor Vinyl and Fabric dye. Everything. Headliner, plastics, door seals, visors... everything. That dye is amazing. The console was the hardest part. Basically mist it on, scratch off where it's supposed to shine through, mist it on, scratch off, etc until it's all covered. It's not perfect, but you wouldn't know unless you really looked at it.

I was thinking about doing that misting and scratching process with plastidip. Figured it wouldn't be worth the hassle to do it with that though since the durability of it would mean I would have to redo it every few years at most.

All the pieces being colored with the same dye would eliminate my biggest fear, having every part be a different shad of black. I feel that makes a car, or any project for that matter, look hacked.
